Avocado and Sumac Stuffed Mini Tomatoes
I recently discovered these super cute Blush Pepper Tom Tomatoes which are sustainably grown in green houses. These tomatoes are the perfect shape and they stand up so they can be stuffed with whatever filling takes your fancy.
My favourite way to stuff them is with this zesty avocado filling but the possibilities are endless. Imagine how cute these would look as canapes or even in kids lunchboxes!
Ingredients
- 1 bunch of Blush Pepper Tomatoes (you can buy these from Woolworths)
- 1 Avocado, pitted and stone removed
- 1 teaspoon sumac
- 1 tablespoon finely chopped mint
- Salt and pepper to season
- 1 tablespoon lemon juice
- Optional- crumbled feta cheese, toasted pinenuts, chilli flakes
Thermomix Method
- Cut tops off the tomatoes
- Scoop out the flesh and discard
- Place mint in the TM bowl and blitz on speed 5, 3 seconds
- Scrape down bowl and add the rest of the ingredients
- Blitz on speed 5 for 3 seconds
- Scoop mixture into the tomatoes and serve
Non Thermomix Method
- Cut tops off the tomatoes
- Scoop out the flesh and discard
- Chop mint finely
- In a bowl add all the ingredients and mash with a fork until smooth
- Scoop mixture into the tomatoes and serve
