Choc Mint Chip Slice

Choc Mint Chip Slice

I have always loved anything choc mint flavour and this slice recipe does everything to satisfy my cravings!!

It is super rich so you only need a small square.

Ingredients

  • 1 cup raw cashews
  • 1 cup dessicated coconut
  • 10 large medjool dates , pitted
  • 6 tbs  Raw Cacao Powder 
  • 4 tbs raw cacao nibs
  • 1/2 tsp vanilla extract
  • A pinch of Himalayan salt
  • 10 drops peppermint oil (my favourite brand is Twenty 8 Essentials)

Ingredients- Ganache

  • 100g dark chocolate
  • 160g coconut cream (use as much of the hard cream that sits at the top of the can as possible)
  • 2 tablespoons of maple syrup or sweetener of choice

Method

  • Add all ingredients  except the cacao nibs to your Thermomix or food processor and whizz until combined and sticky (TM Speed 8, 10 seconds)
  • Add the cacao nibs and whizz for a few more seconds until they are combined (TM Speed 5, 5 seconds)
  • Line a slice tray with cling wrap and press mixture into the tray
  • If you have a Thermomix TM5 simple follow the chocolate ganache recipe on the chip (replacing the cream with coconut cream and doubling it 160g instead of 80g) and adding the maple syrup when you add the coconut cream
  • If you don’t have a thermomix, warm the coconut cream in a small pot then add the chocolate (chopped up) and maple syrup and whisk until melted and combined.
  • Pour over the slice
  • Place in the fridge to set for 2 hour
  • Slice and store in the fridge
