Nutty Salted Caramel and Coconut Slice
YUMMMMMMMM thats all I need to say about this slice really… There is something so good about the combination of creamy salted caramel topped with crunchy nuts and shredded coconut. I could literally devour the whole tray!
Ingredients
Base
- 1 cup raw almonds
- 1/2 cup cashews
- 1/2 cup shredded coconut
- A big pinch pink salt
- 6 medjool dates, pitted
Filling
- 1/2 cup tahini
- 1/2 cup maple syrup or sweetener of choice
- 1/2 cup melted coconut oil
- pinch of pink salt
- 1 tablespoon peanut butter
- 1 tsp vanila extract
Topping
- 1/2 cup shredded coconut
- 1/4 cup macadamia nuts
- 1/4 cup dry roasted almonds
- A big pinch of pink salt
Directions
- Add all base ingredinets into your high speed blender, food processor or Thermomix and mix until it is sticky and can be pressed together between your fingers (TM Speed 8, 20 secs)
- Press into a slice tin that has been lined with baking paper
- Place in the freezer
- Add all filling ingredients into your high speed blender, food processor or Thermomix and mix until it is smooth (TM Speed 5, 10 secs)
- Pour on top of the base and set aside
- Add all topping ingredients into your high speed blender, food processor or Thermomix and blitz until the mixture is still a little chunky (TM Speed 5, 4 seconds)
- Sprinkle on top of the caramel and press it in a little
- Place in the freezer to set for a couple of hours then slice.
